Begin your foodie odyssey in one of Morocco’s most renowned cities, Casablanca. Like many of Morocco’s hotspots, the enormous city offers a heady mix of fascinating architecture, some of which holds UNESCO World Heritage status. The Hassan II mosque, the largest in Morocco, is a testament to its Arabic roots, while the palm-lined boulevards of D’Anfa and Mohammed V hark back to its French colonial period.
Venture beyond the diverse buildings to discover a wealth of gastronomical wonders, from farm-to-table experiences to the top-class restaurants along the bustling La Corniche – including an exquisite Mediterranean restaurant on the fifth floor of the Four Seasons, your hotel for the next three nights.
Of course, your culinary crusade in Casablanca would not be complete without a trip to Rick’s Café. Opened in 2004, it plays homage to the bar where love was found and lost in the 1942 classic film Casablanca. Celebrate the golden age of Hollywood with an included meal here – sit back, drink gin, listen to music and taste their signature dish, a goat’s cheese and fresh fig salad.
Next, you’ll travel westward to Fes for four nights, a foodie paradise made up of expansive souks and labyrinthine alleys. You’ll begin with a tasting trail through the enchanting Medina, led by a local food expert. The aromas of fresh tagines, spices, honey and dishes cooking in traditional farnatchi ovens will tingle your senses. Graze on authentic Moroccan snacks including spicy sardines, fresh goat’s cheese and harcha flatbreads, washed down with ‘Moroccan whiskey’, also known as mint tea, in a traditional tea house.
After tantalising your tastebuds, you’ll have the opportunity to create some typical dishes with world-famous chef Tara Stevens, whose style of intimate, homely cooking is showcased in her culinary class. Shop for the finest ingredients in a local market before preparing exquisite dishes under Tara’s skilful guidance in her courtyard garden, where you will then enjoy the fruits of your labour, paired with local wines.
Just a stone’s throw away from Fes, discover another variety of Moroccan cuisine with a visit to a Berber village, where you will enjoy a short trek and a picnic. End your gastronomic adventure with an unforgettable meal at Nur, one of Morocco’s finest restaurants, where a dynamic team of chefs serve up a unique menu that is improvised daily, always featuring the freshest seafood and seasonal vegetables.
You’ll be staying at one of Fes’s most luxurious hotels, Hotel Sahrai. Minimalistic yet grand, the vistas overlooking the ocean and city are captivating. To round off your last evening, sip on a Spritz cocktail at the rooftop bar and watch the stars across the North African sky.
